My Story
Hello and welcome to Elizabite's! My name is Elizabeth, and I am a 16-year-old baker.

My earliest memory of baking is from when I was five or six years old. My mom, sister, and I would coat our tongues with rough sugar granules as we rolled snickerdoodle cookie batter into balls and smothered them with cinnamon sugar. I loved being able to create something delicious out of just a few simple ingredients. Ever since then, baking has been one of my favorite hobbies. I started Elizabite's so that others could enjoy my desserts as much as I love making them.

When I was diagnosed with celiac disease a few months ago, I had to cut gluten out of my diet and give up many of my favorite wheat-based baked goods. As a baker, this news was heartbreaking. I felt like I couldn't do what I loved anymore, and for a long time, I felt lost. However, as I slowly discovered gluten substitutions to incorporate into my baking, I started to explore macarons. Macarons are naturally gluten-free and made with only a few essential ingredients. They seem simple to make, but are incredibly finicky and require exact measurements and timing. When I made macarons for the first time, I completely failed. But as I kept making batch after batch, experimenting with different oven temperatures, baking times, and piping techniques, I realized that I had finally found myself a challenging, delicious, and most importantly, gluten-free undertaking.
